Raib is a Moroccan homemade yogurt flavored with orange blossom water. It's so smooth and creamy... absolutely devine - you will never find anything like it in a supermarket. It is actually very easy to make Raib if you remember the following tricks:
1- Choose a good yogurt starter
2- When heating the milk do NOT boil, but just bring it to a boiling point then remove it from the heat
3- Yogurt needs to rest in a warm place for 8-15 hours. If you want a smooth and soft yogurt then 8-9 hours of resting time, and you want a denser yogurt then 15 hours.
